Actually the Turkey was cooked for less than the normal length of time of 20 mins per pound + 20 mins. According to Nigella, less is more and this bird was soaked for 2 days beforehand in a concoction of spices and oranges and more ....and was the tastiest and most moist Turkey I've had for years.
