I went through this years ago and spent a lot of money on trial and error.
My sugestion is go to a rolling road tuning centre they will have a selection of jets, tubes etc and will swap and change for the best setup, also remember its not just the carbs, timing and balance will pay a major part in the set up.
Remember these guys do it day in day out what may take you a week to achieve they can do in 10 minutes, money well spent.

I have this;

   1600TC   Dyno set Janspeed exhaust,  BP7EV plugs   40IDF

Chokes            32
Mains              135
Em Tubes        F11
A/Cor              210
Idle                 45
Pump              40
Pump Bleed      50

I have a 2Ltr Dyno set as well which is very very similar to this, so the 1800 should be around this to get you going for the trip to the Dyno.
